Style : Pale Ale. Modern, balanced, resolutely hoppy. The aromatic expression is carried by the duo Cascade (partly from our own hop garden in Mussy-la-Ville, complemented with German Cascade) and Citra (US), supported by a biscuit malt base that structures the whole.

- Bitterness: 3/5 — assertive but controlled (IBU 35).
- Body: 3/5 — medium, without heaviness.
- Aromatic intensity: 4/5 — bold, without saturating.
- Aromas: citrus · floral · light tropical fruits.
- Finish: clean and balanced, slightly lingering.
How to serve
To fully enjoy its potential, give it a prime spot at the front of the fridge (4–6 °C). Sip slowly, ideally in a tulip or Teku glass, to let the aromas come through.

- Natural in-tank carbonation — industrial CO₂ kept to the strict minimum (just to fine tune), no second fermentation.

Story behind the recipe
Our first Pale Ale. Cascade for the floral and citrus notes — partly from our own hop garden in Mussy-la-Ville, complemented with German Cascade — and American Citra for the tropical punch, on a biscuit malt base that gives structure. A "moments" beer — aperitif, everyday meal, summer evening — resolutely hoppy yet not overly bitter.
Brewed with 100 % organic barley malt, unfiltered, unpasteurized, naturally carbonated in the tank.
